POTATO AND CHEESE PIE





Ingredients
250g all-purpose flour
½ cup warm milk
25g sugar
5g instant dry yeast
1 tsp salt
1 egg beaten
56g softened unsalted butter
For filling
2 large potatoes
50g grated cheese cheddar or mozzarella
3 tsp spring onions chopped
3 tsp boiled sweet corn
Salt to taste
Black pepper freshly ground to taste
Method
Make a dough:
·         In a mixing bowl add flour, yeast sugar, salt, softened butter.
·         Using a strong spoon or use a mixer until the dough smooth and soft. About 5 mints.
·         Cover the dough for 30 minutes in award place.
Make a filling:
·         Peel the potato and mashed roughly.
·         Add spring onions, sweet corns seasons with salt and pepper according to your taste.
·         Add some grated cheese mixed roughly and set aside.
Make a pie crust:
·         Now use dry flour to handle the soft dough.
·         Flatten the dough similar to a pizza crust.
·         Make small cuts around the edges.
·         Make a braid press the braid little bit inside the pie.
·         Prick the dough with a fork.
·         1 tsp olive oil spread on the dough.
·         Pour the potato filling onto the dough spread evenly.
·         Apply the egg wash on the braided part.
·         Sprinkle grated cheese bake for 20-25 minutes at 1900Cin a preheat oven.
·         Serve hot.
